ECO-WEEK: VEGAN RECIPE 3

Our third recipe is a perfect winter warmer: vegan vegetable ramen! Yum! This recipe has been shared with us by Verity, our very own Eco-Committee member and it looks great and full of nutrients!

Ingredients:

  • 1 garlic clove
  • 1 red onion
  • ½ red pepper
  • 1 handful of spinach
  • ½ carrot
  • 1 celery stick
  • Sweet corn 
  • 1 tsp curry powder 
  • 1 cup vegetable stock
  • 1 can coconut milk
  • 1 tsp vegemite
  • 1 nest wholemeal noodles
  • Soy sauce 
  • 1 tsp sesame oil

Instructions:

  1. Chop the garlic and onion, then cook in a pot with the sesame oil for two minutes on a low heat 
  2. Chop the pepper, carrot and celery and add to the pot
  3. Remove the corn from the cob and add to the pot
  4. Mix the vegetable stock, vegemite, 1 tsp of soy sauce in a bowl of boiling water
  5. Add the nest of noodles to the boiling water and let them soak
  6. Add the curry powder to the vegetables and stir
  7. Add the coconut milk to the pot and mix the vegetables through
  8. Add 1 tsp sauce to the pot
  9. Once the noodles have softened, add them and the stock mix to the pot and combine with the coconut milk and vegetables 
  10. Bring to the boil then simmer for 2 minutes
